Why You Will Like This Recipe
This soup typically includes ground beef, tomatoes, onions, garlic, and Italian herbs, all simmered together with beef broth and broken lasagna noodles.
Lasagna soup is then topped with a generous dollop of ricotta cheese and sprinkled with mozzarella and parmesan cheese. It's a perfect dish for a cold winter night or anytime you're in the mood for a delicious and satisfying meal.
Lasagna soup is one of my top 100 recipes on this site! It is lasagna in soup form and a reader favorite. I will sometimes heat up some Texas toast (Lite) and use that to dip the soup in if I have enough points left over for that.
I like to make this lasagna soup during the Winter months here. It helps me get through the dreadful and super cold awful months of January and February in Fargo, ND. My mom sometimes jokes about how whenever she makes lasagna, her lasagna is so soupy. Well, guess what Ma? Mine is too. 🙂
Ingredients Needed
- Onion, chopped (yellow or white)
- Lean ground beef Is considered better than higher fat options for several reasons. First, it has less saturated fat, which can contribute to heart disease and other health issues. Additionally, it tends to have fewer calories per serving, making it a good option for those watching their weight. The 96% lean ground beef from Aldi is my favorite.
- Garlic, minced - Chopped fresh garlic can take some time to chop so I often always use the freshly minced garlic that comes already made in a jar.
- Crushed tomatoes - or store bought marinara sauce can be used.
- Dried oregano - Is a common herb used in cooking, particularly in Mediterranean and Mexican cuisine. It has a pungent, slightly bitter taste and a strong aroma
- Low-sodium chicken broth - Some people prefer homemade stock, which allows for control over the ingredients and seasoning. Othe rs prefer store-bought stock for convenience.
- Lasagna noodles, broke into 2" pieces - or any pasta shape, I will sometimes use Malfalda.
- Fat-free shredded mozzarella - Reduced-Fat Cheese has a lower calorie count and less saturated fat than regular cheese, but it may also have a different taste and texture. It also helps with keeping the calorie count pretty low for this recipe.
- Toppings (optional):
- Grated Parmesan, for garnish
- Torn fresh basil, for garnish

Recipe FAQS
Yes, lasagna soup can be made in a crock pot. Simply brown the beef and onions in a skillet, then transfer to the crock pot along with the other ingredients. Cook on low for 6-8 hours or on high for 3-4 hours.
Yes, lasagna soup can be made in an Instant Pot. There are many recipes available online that provide instructions on how to make lasagna soup using an Instant Pot. Simply search for "Instant Pot lasagna soup" to find a recipe that suits your preferences.

I love this soup but I started making it with a can of evaporated milk instead of the cheese that sticks to everything, we love it!
Jenna says
Yes, it should in an air tight container

Came out deliSH! Does anyone know if this freezes well?
Terri says
Love the flavor of this soup. Was disappointed that most of the mozzarella sank and stuck to the bottom of the pan even tho I was stirring. I’d love to make this again. Any tricks with getting the mozzarella to melt?
Dana says
We absolutely loved this soup, even my teens who are super picky! I'm not a giant fan of sausage but it was really good. I'm trying it again, but I'm using ground turkey this time, beef broth and some bow tie pasta because the Lasagna noodles were a pain! Thanks for the awesome recipe, this is in our rotation now, especially in the winter.
Cliff says
Approximately how long does this take to make?
Jenna says
That would be my guess Joe!

Love this soup, but does anyone else have issues with fat free mozzarella sticking to everything when melted in the soup? I mean everything: bowl, pot, spoons, teeth, roof of mouth, etc. LOL. Still a great low point recipe but wondering if that is due to fat free cheese?
